Ingredients

  • 2 oz. 55 g butter or olive oil
  • 1½ lbs 650 g salmon, boneless fillet, in piecessalmon, boneless fillets, in pieces
  • salt and pepper
  • ½ cup 120 ml mayonnaise or vegan mayonnaise or sour cream
  • 1 tbsp 1 tbsp sambal oelek
  • ¼ oz. (1½ tbsp) 7 g (21 ml) shredded Parmesan cheese
  • 1 lb (15 cups) 450 g (3.5 liters) fresh spinach

Making low carb simple

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Grease a baking dish with half of the butter. Season the salmon with salt and pepper, and place in the baking dish, skin-side down.

  3. Mix mayonnaise, chili paste, parmesan cheese and spread on the salmon filets.

  4. Bake for 20 minutes, or until the salmon is opaque and flakes easily with a fork.

  5. Meanwhile, sauté the spinach in remaining butter until wilted, about 2 minutes. Season with salt and pepper.

  6. Serve immediately with the oven-baked salmon.

Tip!

It’s super simple to make this recipe dairy-free! Just use mayo and skip the parmesan cheese.

    Every chili paste I found has sugar as the first ingredient. I can't believe that is right. What chili paste are you recommending.

    Look for the chili garlic sauce by Huy Fong Foods ( not their siracha) it does not have sugar. We use it all the time in Chinese cooking.

    Sometimes I find myself trying to follow a recipe to a tee without really thinking about what I would enjoy out of it. I was getting really hung up on not finding chili paste or other ingredients you just can't commonly find in your average super market, like mild chipolte paste or some thing like that. Really all you need is about 2 teaspoons of chili powder and 1 teaspoon of red pepper flakes and you are good to go. This dish is absolutely delicious and I would highly recommend it.

    I found/bought Sambal Oelek ground fresh chili paste. It has 0 grams of sugar. Packaged by Huy Fong Foods, Inc.

    I could not find chili paste but I substituted with red Thai curry paste and it was DELICIOUS. Not sure about the carb comparison between the two though.

    Oh my gosh I just made this to try it out and it is so delicious. I cut back the mayo in the paste a bit cause I only made two salmons fillets (one tonight and the other tomorrow for lunch) and it turned out amazing. I can definitely live off this "diet".

    Made this recipe tonight and it was so good!!! Loved the flavor! Who knew mayo and chili paste could go so well with fish!!! The Huy Fong Foods Fresh Chili Garlic Sauce does not have sugar in it and went incredibly well with this dish!! You can get it in the "Asian" section at your local supermarket or even Walmart!! Enjoy folks!! This was yummy!

    I, too, am looking for a substitute for the salmon. I've tried it many times and just can't enjoy it. Also, my daughter is gluten and dairy free. I'd love to read a suggestion for substituting for the cheese in many of these recipes without using dairy free cheeses.

    I'm sorry, but this was just waaay too much fat to stomach. I am not opposed to mayonnaise, and I didn't think the flavor was too much, but the amount of it was far too much. I actually had 2 lbs of salmon because I bought it fresh and that's how it worked out... even over the extra half a pound, this was just way too much. I literally couldn't finish it. My suggestion would be to use half as much (or less) mayo for the topping. You'd get a crisper topping that way too. I understand that higher fat is desirable when transitioning into this diet, but it's more than I can take so far. The first meal on this starter plan was pretty rich, and I almost couldn't stomach a whole serving of that, but meal number 2 (this one!) was far worse. I may just have to cut back on the fat content in the meals and make up for it with a cheese snack... I made the crispbread recipe, so that could help.

    Hi guys, was anybody else a bit surprised as too how much mayo to be used here? I dont know if I am misunderstanding the recipe here...but 60ml of mayo on 1 salmon breast?

    Also scrambled eggs for breakfast...60g of butter with 3 eggs?

    It looks so so much fat? Am I right???

    I have similar questions to the ones above but...it does not look like anyone is responding to questions so I won't add another one. That piece is kind of disappointing to me as I am starting out on the 2 week challenge. I was hoping to read current feed back on the recipes, etc., but I am not seeing it much any of the strings I have looked at over the last 2 days. I love this program so far as it is so similar to Atkins which I was successful at 15 years ago. I just this piece catches up with all of us who need input on a real time or at least very current basis. Again, I do support this program I even became a member although I am just starting the challenge.

    Yes, I didnt like this. I found it was way too much sour cream but I used it on my 2 pieces. My familily didnt like it either. It turned out nothing like the picture as here it looks nice and browned on top. Just as well there are many other recipes I enjoy. Trail and error, thanks

    I adore this recipe and make it weekly. I use Mae Ploy Thai red curry paste and it is just delicious in this recipe. It is available in most Asian grocery stores and lasts forever in the refrigerator. I generally use a mixture of Mayo and sour cream . And the sauteed spinach is a wonderful accompaniment. I am amazed at how delicious most of the recipes are on this site and so simple to prepare. too Thank you Diet Doctor!

    This was great. I made this with mayo (30g) and butter for frying.
    I wish I had salted the salmon better on both sides and added more chilli paste. Will definitely try that next time.

    Completely forgot the Parmesan and used chipotle paste, was great. Really quick and delicious, definitely making again and may try same topping on a chicken breast as well.

    Seeing a few negative comments on the amount of fat in different recipes. Just wondering if they are getting the whole keto concept. Reality is if your on the diet to lose weight, then you have plenty of fat in your body already. Make sure you hitting the macros for your protein so you don't lose lean body mass. Keep your carbs down under 25 and you will get into Ketosis. Suggest you use a Tablespoon of MCT oil everyday. (Amazing how much energy this will give you. ) Recipes here are really guidelines for you to use, adjust them to your personal taste. I personally rarely use the amount of suggested Fat. Its there to maintain the 70, 20 and 5 ratio. Like I said you most likely have enough fat in your body already and really don't need a huge amount from dietary sources. Focus on keeping your carb count as low as you can get it and make sure your are eating enough protein. Again MCT oil is a great supplement to get you into Ketosis.

    I have always loved this dish. My hubby who is not on a keto diet loved it so much he wanted to eat it fortnighly so I got sick of it :(. Tonight I cooked it for the first time in about 18 months and it reminded me as to why it is such a delicious dish (I love salmon). I have told my hubby that we will be eating this on a MONTHLY basis!
