The easy Tater Tot Breakfast Casserole Recipe is perfect for filling meals! My kids love having breakfast for dinner, as we call it, brinner, and we also love late brunch on the weekend. But truthfully, there is never a wrong time of day or year for breakfast casserole.

Now with our crazy schedule, it is no surprise that casseroles are my go-to when I don’t use my crockpot. Tater Tot Casserole was one of the first dinners that Michael learned to cook on his own and is one of those dinners that work great on busy nights. This meal contains protein with bacon, eggs, and sausage, keeps the growing boys full longer!

How To Make tater tot casserole for breakfast

Preheat your oven to 350 degrees.

Slice and dice your bacon to the doneness you like in a pan. I leave my bacon not fully cooked since it will also cook a smidge more in the oven.

In another large skillet, cook your sausageuntil it is cooked thoroughly, and drain the fat. If you have not checked out Thyme and Table at Walmart, you should; the pans are fantastic!

Spray a casserole pan with a nonstick spray. My mom is all about her metal pans, but I am all about the Pyrex glass pans! The lids on these store leftovers so well, and I don’t have to move them to other containers.

You can also cook this in a Pioneer Woman Baking Dishes; this recipe is similar to the pioneer woman tater tot casserole.

Combine your tater tots, bacon, cooked sausage, and cheese in a large bowl.

Whisk eggs, salt, pepper, garlic powder, onion powder, and milk using a separate bowl. I use my large Pyrex measuring cups for this.

Spread the tater tot combination in the bottom of the casserole pan.

Pour the egg mixture over the tater tots into the pan.

Bake for 65 minutes or until the eggs cook all the way through.

How to store breakfast tater tots casserole

Store leftovers in the fridge in an airtight container for up to 3 days. You can freeze this dish before or after cooking for up to 3 months in an air-tight container.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
